Great way to use up left over vegetables
A good quality non stick pan is needed for this dish.
Fry onion and bacon, add vegetables. Cook until vegetables tender.
Whisk milk (or cream or sour cream), eggs, flour and mustard.
Pour egg mixture over bacon and vegetables, sprinkle with cheese, season with salt and pepper.
Cook on low heat until almost set.
Place under grill until fully set and top browned.
Serve with leafy green salad and pita bread.
Serves 4 as a meal or 8 as a side
