1. Bring 2 quarts of water to boil in large saucepan. Add farro and 1 tablespoon of salt. Return to boil, reduce heat to medium low and simmer until farro is tender with a slight chew. 15-20 minutes. Drain any excess water .
2. Whisk 1/4 cup pf oil, lemon zest and juice, 1/2 teaspoon of salt and 1/4 teaspoon of pepper together in bowl. Add carrots, spinach and farro and toss.
Heat remaining oil in a skillet on high heat until oil is shimmering. Add mushrooms, 1/4 teaspoon of salt and 1/4 teaspoon of pepper and cook, covered, until mushrooms release their liquid about 5 minutes and mushrooms begin to brown about 3 minutes longer.
Add to farro mixture and serve.
You can also add shrimp or chicken.
