Delicious and easy meal
Combine all the ingredients and bring the brine to a boil. Once boiling, remove from heat. Pour the brine into a large container. Chill in the refrigerator.
When the Brine is cool, add the chicken and chill in the refrigerator for 12 hours. Take the chicken out and dry with paper towels. Strain the brine down the sink and toss what’s left in the strainer. Place the chicken back in the pot and leave uncovered in the refrigerator for 24 to 48 hours, to dry. Then remove the chicken from the refrigerator and set aside for one to two hours, so it comes to room temperature.
Preheat the oven to 425°F. Place the carrots, garlic, onion, potatoes, and celery on a large baking sheet.
Whisk together the olive oil, salt, lemon zest, lemon pepper, rosemary, and thyme. Pour half over the vegetables and mix with your hands. Place the chicken on top of the layer of vegetables.
Mix the soya sauce with the melted butter and brush over the chicken. Sprinkle with the lemon zest salt mixture. Put the baking sheet in the oven and roast about 60 minutes or until the internal temperature of the chicken reaches 165°F.
Finish with a squeeze of lemon juice over the chicken and a sprinkle of fresh chopped parsley. Add salt and pepper to taste.
