Wittman and O'Byrne Family Recipe from Germany for traditional Lebkuchen cookies or wafers.

Melt and heat honey, butter, sugar, lemon rind, and lemon juice. Let cool slightly.
Mix together 2 cups flour, spices, nuts, citron, and peel. Add to honey mixture.
Beat in eggs and add 1 cup flour plus soda dissolved in water. Let stand 24 hours. (Note from Robin: Put in the refrigerator for the last hour to make it easier to roll out.)
After 24 hours, add sufficient flour to roll dough to 1/8" thickness. (Note from Pat: "I have never needed to add any flour at that point. Note from Robin at elevation: I was very generous with the flour when rolling it out. Roll into a rectangular shape, using your hands to square the corners.)
Cut into small cakes: 1" x 2" (rectangles). Ice with powdered sugar and water icing and decorate with 1/2 blanched almond or a piece of citron. (Pat always used 1/2 blanched almond.)
Bake on parchment lined cookie sheet in a moderately slow oven, 325 degrees for about 30 minutes, until first tinge of brown on the edges. (Note from Robin: original recipe called for "ungreased cookie sheet." They were very difficult to remove, so I added parchment paper. The original recipe also had to estimated cooking time. The first batch was underdone at 20 minutes.)
Makes approximately 75 cookies.
