Pre-heat oven to 400 degrees. Pour 1/4 cup vegetable oil into iron skillet. Heat skillet until oil is hot. Meanwhile, beat eggs; add cornmeal mix, 1/4 cup vegetable oil; sour cream and corn. Combine ingredients well. Pour into heated iron skillet (should sizzle when mixture poured in). Bake 20-25 minutes. Should be lightly brown on top and spring back when touched. Enjoy!
