Distinctly Christmas flavours, but lighter than the traditional pud and with a more cake like texture than a mince pie
Heat the oven to 180C/Gas Mark 4. Generously grease a nonstick 12-hole muffin tin with butter; a silicone mould is best if you have one. Mine has holes 4cm deep and tapering from 7cm wide at the top to 5.5cm at the bottom.
Melt the butter in a pan over a low heat until it bubbles and froths, then put to one side. Put the icing sugar, almonds, flour, lemon zest and cinnamon in a bowl and mix together well. Stir in the egg whites, then beat vigorously for about 10 seconds. Pour on the melted butter and beat until everything is thoroughly combined.
Fold in 8 tbsp of the mincemeat, then divide the mixture evenly between the muffin holes. Put the tin in the oven and bake for 18-20 minutes. Depending on your tin, the cakes may bubble up irregularly in the middle — just call it rustic charm.
While they’re in the oven, make the orange cream by whisking together the cream, icing sugar, orange zest and the Cointreau to taste. Put to one side.
Gently heat the remaining mincemeat in a small pan until hot and bubbling. While the cakes are still just warm, place them on individual plates. Spoon a little of the mincemeat into the centre of each one and add a few shreds of orange zest.
Dust sparingly with icing sugar and serve with a blob of orange cream on the side.
