Preheat over to 375 degrees. Place bread in a medium-size bowl and pour wine or water over it. Let stand 10 minutes, then squeeze dry with your hands and set aside, retraining liquid that remains.
In a large bowl, combine ground meats, then add bread with soaking liquid and all remaining ingredients. Blend thoroughly, kneading with your hands to make sure there are no chunks of bread visible. With dampened hands shape into a 6 x 10 inch oblong load and place in a 9 x 13 inch baking pan. Rub the meat load with about ¼ c. water to make it smooth; this also gives it some add’l moisture while baking.
Bake meat load, uncovered, until an instant-read thermometer inserted in the center registers 150 degrees, about 1 hour. (The meat will continue to cook out of the oven.)
Remove meat loaf from oven and allow to rest for 5 to 10 minutes before slicing and serving. This allows the meat to firm up and the internal juices to stay within the load. Slice into ¾ inch slices and serve.
Serves 8.
Notes: Bulk Italian sausage is uncooked sausage that is sold without being stuffed into casings. If you can’t find Italian sausage sold in bulk, then buy the links and remove the meat from casings before cooking.
