Add beef to a bowl and season with SALT and PEPPER.
Season the onions with the CHILI FLAKES after cooking for a couple minutes.
Place BREAD CRUMBS in a separate bowl and create a well. Add MILK and mix. Add to the bowl with the beef. Add sauted onions, garlic, and chili flakes to beef. Mix with your hands.
Roll into meatballs the size of golf balls.
Saute all sides of meatballs in olive oil. Before flipping meatballs, add CORIANDER SEEDS, CARDAMOM SEEDS, TURMERIC, CINNAMON, DRIED CHILES, LEMON GRASS, and GINGER.
Add CHICKEN STOCK and COCONUT MILK, enough to cover 3/4 of the meatballs. Bring to a boil and simmer for 8-10 minutes.
Zest LIME on top of the meatballs and squeeze lime juice into pan. Stir, keeping zest on top of meatballs.
Serve by ladling broth into a bowl and add 3-4 meatballs.
Double recipe and freeze.
