This is an easy pasta that is really yummy!
Bring Pasta water to boil with Salt, once it comes to a boil add pasta. Meanwhile, put a large flat skillet on medium high heat. When it's hot, add olive oil. Add Bacon cut into lardon (thin strips) and cook, stirring frequently. Once bacon is half cooked and fat rendered, add onions and cook until translucent. Add garlic and cook for a couple minutes. Add proscuitto and cook until bacon and proscuitto are crispy. Grate some pepper over pan, a couple turns. Add Peas and lemon juice and stir. Turn down heat to low until pasta is cooked. Add pasta and 1 ladle of pasta water and toss with contents of skillet. Add parmesan and pecorino and toss. Grate some additional Pecorino over each serving.
