A tender, golden biscuit crust conceals ripe, perfumed peaches in this fantastic summer
cobbler. Serve a la mode or with fresh whipped cream.
1. Place oven rack in lowest position; heat oven to 375 degrees F.
2. Filling: Toss peaches with lemon juice in a 13x9x2-inch baking dish. Mix together sugar,
Cornstarch, and cimmamon in a small bowl; add to peaches and toss to evenly coat.
3. Cobbler Dough: Whisk flour, cornmeal,1/4 cup of the sugar, baking powder, salt, and
cinnamon in a large bowl until blended. Cut in butter with a pastry blender until mixture
resembles coarse breadcrumbs. Add cream and mix with fork, just until dough comes
together. Gently knead dough in bowl 5 times.
4. Turn out dough onto a lightly floured surface; roll into a 13x9 inch rectangle, about 3/8
inch thick. Cut dough rectangle lengthwise into 1 inch wide strips. Arrange strips diagonally
over peach mixture, lattice-style, weaving the strips if you like, and spacing them 1-1/4 inches
apart. Trim strips to inside edge of dish. Reroll scraps; cut more strips if needed. Brush
lattice with a little milk or cream; sprinkle with the remaining 2 tablespoons of sugar.
5. Bake cobbler 45 minutes, or until top is golden brown and juices are bubbling. Cool 15
minutes before serving. Serve with vanilla ice cream.
