Flavorful stew that's easy enough for weeknight cooking or can survive a long day in the crock. In my house, we pair this with baked potatoes or yellow rice.

1. Add sausage and onions to a large pot, with a Tablespoon of broth.
2. Cook on medium until sausage is browned and onions are soft.
3. Add carrots and celery. Sauté for 5-10 minutes.
4. Add rinsed lentils, spices, and broth to the pot. Stir well.
5. Cover and cook on medium-high until boiling. Stir and replace lid.
6. Reduce to low and simmer 40 minutes.
7. When lentils are tender, stir in frozen spinach.
8. Cover and cook another 10-15 minutes before serving.

Slow Cooker --
- Dump everything into crock. Cook on LOW 8 hours. Add liquid as needed to prevent drying out.

Freezer Meal --
- Break raw sausage into pieces and add to gallon baggie. Add everything else except the broth.
- Mark with prep date and amount of broth to add on cook day. Use within 3 months.
- Thaw overnight (in fridge) before cooking.
- To cook, dump into crock with required broth and follow cooking time.
- Store leftovers in airtight container. (4-5 days fridge / up to 3 months freezer)
- Extra veggies can be used if you like different proportions in your stew.
- Can sub in smoked sausage (sliced and quartered); will change consistency.
- Can sub cumin for coriander; coriander is sweeter/milder, cumin gives extra kick.
