In a small bowl, combine the first five ingredients. In a 1 quart glass jar, layer the flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. (I find putting the a lighter ingredient over the flour, like sugar or coconut)
Cover and store in a cool dry place for up to six months.
To prepare cookies:
In a mixing bowl, beat butter, egg and vanilla. Add cookie mix and mix well. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 350 degrees for 9-11 minutes or until golden brown. Cool for 2 minutes before removing to wire racks.
