Stir in chopped onions and bell peppers, chili powder, cumin and a pinch of crushed red pepper flakes; cook until the vegetables are just softened.
Stir in cannellini beans, fire-roasted canned tomatoes with their juice and canned pumpkin.
Simmer for 20 minutes.
Serve with sour cream, sliced scallions, and shredded Monterey Jack Cheese
