1. In a large skillet, bring 4 cups low-sodium vegetable or chicken broth to a simmer. Add 1 lb fresh cheese tortellini and simmer per package directions until barely tender, 4 to 5 minutes.
2. Stir in 6 ounces snow peas (strings removed, halved) and simmer until tortellini and snow peas are tender, 1 to 2 minutes.
3. Remove from heat and stir in 2 tablespoons basil pesto, then gently toss with 1/4 cup grated Parmesan.
4. Working over the skillet, finely grate in the zest of 1 lemon. Serve with additional Parmesan if desired.
