Best Ever Blueberry Coffee Cake Ingredients

2 cups Flour 2 large Eggs
2 teaspoons Baking powder 2 teaspoons Vanilla extract pure
1/2 teaspoon Salt 2 cups Blueberries fresh or frozen
8 ounce Cream cheese softened3 tablespoons Sugar
1/2 cup Butter melted1 1/2 teaspoons Cinnamon ground
2 cups Sugar

Instructions for Best Ever Blueberry Coffee Cake


Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 inch baking pan; set aside.

In small bowl stir together flour, baking powder and salt; set aside.

In a large bowl beat cream cheese and butter with an electric mixer on medium speed for 3 minutes or until creamy. Add 2 cups sugar; beat until combined. Add eggs, 1 at a time, beating well. Add flour mixture; beat until combined. Stir in vanilla. Gradually fold in blueberries.

Batter will be very thick. Pour into prepared pan and smooth the top.

In small bowl stir together 3 tablespoons sugar and the cinnamon. Sprinkle over batter.

Bake for 50 to 60 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.

We had a Memorial Day barbecue today, and the supermarket had fresh blueberries on sale. This recipe turned up in a web search, and the cake was a huge hit. I was worried because the batter seemed so thick, but the cake was tender and flavorful. I served it warm with whipped cream,and there is a small piece left. (Not for long, because everyone just went home and I am putting on a pot of coffee for my husband and me. Starting a diet tomorrow, so I think we should "retire" the cake tonight!)

The only thing I did different was to coat the berries with some flour so they wouldn't sink to the bottom. Otherwise, we loved it exactly as it is!!

Great recipe! The texture and flavor are wonderful. I found my latest, new favorite recipe ;) I made this recipe twice. First time as directed YUMMY ! Second time I used 2 cups chopped Macintosh apples and added small amount of cinnamon. My family loves this one! Thanks for sharing it..

I just took this out of the oven. The aroma was wonderful. I could not wait for it to cool so I took a sliver off the side. The taste was wonderful. The texture was just right and it just melted in my mouth. This is a moist coffee cake. I made it according to the directions but I did mix a little cinnamon and ginger into the batter. I also used fresh blueberries. I baked it for exactly 50 minutes and it was perfect. Thanks so much for this wonderful recipe. This is great for a brunch as it makes a large pan.

Well - this one is a definite winner. It is quite easy to make, especially with a good mixer. It is easily the best blueberry cake I've tried. I think that the batter could also be used for other luscious fruits (raspberries, apples, rhubarb, etc.) The double dose (2 tsp) of pure vanilla is a marvellous compliment to the cake. The only change I made was the addition of the vanilla with the sugar to the cream cheese for better distribution.

I made a double batch (48 servings) to take to my church's Mother Day breakfast. I'll find out tomorrow how it went. Tonight I cut the cake into pieces for tomorrow's event and the cake was SO moist. My sister-in-law tried some and she raved about it! The only difficulty I had was trying to fold the blueberries into the thick batter but with a little patience I was able to get them mixed without breaking them apart. THIS ONE IS A KEEPER!
