gypsy06 ,This was a HUGE hit with both of my boys. They absolutely loved it. I did have to use rotini noodles instead since that was all I had. I am going to add more spinach next time. It just didn't seem like enough. Did I mention my boy 2 and 6!!! Fantastic!!11y

bondi1031 ,Wonderful. I used coconut oil to saute but watch for burning. The fresh basil is a must. Will add cherry tomatoes and fresh asparagus next time.12y
rubicon717 ,Admittedly, I'm not a very good cook, still learning, but this was very easy for someone as unskilled as myself. Fresh and delicious and you can adjust everything to your taste and add or subtract different ingredients. Nice framework for the novice.12y

mechellevan ,Good recipe! I would add more spinach, onions, either fresh thinly sliced tomatoes or fire roasted tomatoes with sliced Italian sausage over the top. I added a small amount of crushed red pepper and that took it up a notch.12y
cupcakemedic ,This was so quick, easy, and flavorful. The only things I changed were I used half a box of rigatoni, skipped the basil, and did 6 oz baby spinach. My boyfriend loves to add salt to his dinner, so I was thrilled when the onion (I used a vidalia) and garlic was enough and he didn't add salt! He even skipped the cheese!! This recipe has such a freshness to it. Sometimes simple is better. :)12y

jcz2 ,I had to make tweeks to this one. I started off following the recipe exactly. I noticed pretty quickly the veggies heavily out numbered the pasta. I recommend using half the amount of veggies if you want to use 2 cups of pasta. or just throw in the whole box of penne. I also added Italian sausage and a tablespoon of butter. And I only put in half the spinach. So I basically just did my own thing... It tastes good though!12y
mythgarr ,The flavor was quite weak. This may be due in part to not finding until the last minute that we were out of fresh garlic, but I don't think that alone would fix it. I ended up drizzling a vinegar-wine sauce over the top (1/2c white vinegar 1/2c marsala wine, reduced to 1/2c, thickened with a pinch of flour). If we made this again I would plan to grill some portobellos and serve them sliced over the top as a protein.12y
prb ,If I made this again I would not have used as much spinach and not chopped it up as much but left it more leafy. I think it needed a little something extra- I actually doubled the garlic. Maybe I would add flavorful mushrooms, olives, or sun-dried tomatoes. Maybe some pine nuts?12y
