Heat oven to 180 degrees celsius.
1. Prepare chicken including placing the lemon inside the chicken carcass to keep it moist while cooking.
2. Mix all other ingredients together into a paste.
3. Coat chicken in paste.
4. Cook for approx 1 hour or until golden and juices are running clear
5. Remove chicken from oven and allow to rest for 10 minutes before carving.
