Wash chicken and poke hole in. Turn several times in marinade in glass or ceramic bowl and put in refrigerator covered 8 hours or overnight. turn chicken 2-3 times while marinating.
When ready, place in oiled glass casserole dish and bake in preheated oven 350 degrees covered with some of the marinade. Base 3-4 times while baking 40 - 50 minutes. Serve with lemon wedges and parsley sprigs.
