This is a recipe I've wanted to try for a while. I found several recipes on YouTube. After trying a few, this is just what I came up with using the ingredients I liked. This makes a great freezer meal as well. Hope you like it as well as I do!
Preheat the oven to 400 degrees.
Place the nuggets, peppers, and onions into an appropriate-sized baking dish. In a medium-sized mixing bowl, add the juice from the pineapple and pour the tidbits into the baking dish. Add the remaining ingredients to the mixing bowl and stir to combine. Pour the mixture into the baking dish and mix well. Bake, uncovered, for 20-25 minutes. Serve hot over rice.
Freezer Meal Prep:
Place the chicken nuggets, peppers, and onions into the freezer bag. In a medium-sized mixing bowl, add the juice from the pineapple and pour the tidbits into the freezer bag. Add the remaining ingredients to the mixing bowl and stir to combine. Pour mixture into the freezer bag and seal, removing as much air as possible. Squeeze and slosh around the contents to let the contents blend. Lay the bag flat in the freezer. When ready to eat, thaw overnight in the fridge OR place in a cold water bath and change the water every thirty minutes for faster thawing.
Bake, uncovered, for 20-25 minutes. Serve hot over rice.
In a pinch for time, I sometimes use a bag of frozen pepper mix (like for fajitas). This recipe can also be made with pork. Just coat the cut up pork in flour and brown it in a skillet before adding it to the recipe.
